I was honored to have been asked by my good friend Carrie, of Bella Cupcake Couture, to participate in her “Bella Back to School Blog Party“. Carrie rallies some of the most talented bakers from all over the world to participate and share their delectable recipes, always gorgeously wrapped in Bella Cupcake Couture wrappers of course, which takes them over the top.
I was up for the challenge! But wait…I’m not really a baker. Besides my Healthified Any-Fruit Muffins which I bake up often for breakfasts and snacks on the go, I am a cook. I’m not really into measuring or following recipes exactly, I like the flexibility of throwing in whatever I want. Plus I leave the good desserts to the experts usually. I may make an apple crumble, maybe a fruit and yogurt parfait, but baked goods are something we go buy and enjoy once in awhile….because sometimes you just NEED a cupcake! I thought “what if I make something savory?” I am all about savory and nothing goes better with chili than cornbread!
Cornbread is super easy, I make mine with mostly whole grains and simple, all-natural ingredients. Plus, of course I have to kick it up a notch flavor wise! We sauteed up some jalapenos (check out the cool technique for minced jalapeno perfect for this and other recipes, like salsa), red onion and garlic to give this muffin some kick! A bit of shredded cheese (optional) and you have something really special. Since my stomach loves me much more when I choose gluten free foods so I made these muffins with a gluten free flour (I really like the one from Trader Joes or Bob’s Red Mill). Feel free to use white whole wheat flour if you don’t have gluten free requirements. You can also make it dairy free if you wish.
Part of the Bella Back To School Party is to get into the kitchen with your kids...you know I’m all about that! My son is always in the kitchen with me (actually at 7 years old he has made many complete dinners for us on his own) and my 12 year old daughter likes to do some baking with me when I do it. Carrie has these really wonderful white cupcake wrappers available that the kids can decorate. What a great idea! My tweenager is excited to have these at her next sleepover, when the girls often make up a batch of cupcakes at 10:00 at night. My son loved them also and I thought that decorating these wrappers at his birthday party would be a fun activity. For these muffins the kids were inspired by the Southwestern influence of the corn muffin recipe we created. They decorated them with really beautiful and intricate (a.k.a. very time consuming…I was able to fold a load of laundry while they worked!) Southwestern design. My son was looking at one of his favorite books, The Toughest Cowboy, for inspiration and drew some arrows, guns, targets and hand cuffs on his cowboy wrapper. Super cute, he was really proud of his creation!

Makes 10-12 muffins
1 tsp healthy oil/fat of your choice
1/2 red onion, finely minced
1 clove garlic, minced
1 jalapeno, finely minced (check out my technique here!) optional if you like it mild (ours had pretty much no heat with one jalapeno) or add some more if you like it spicy!
1 cup flour (gluten free flour blend, or white whole wheat flour)
1 cup cornmeal (I of course get mine organic and in the bulk food department – not suitable for those with diagnosed gluten free requirements – get yours packaged and certified gluten free)
3 tsp baking powder
1/2 tsp Kosher/sea salt
1 cup milk (organic or dairy free alternative)
1/4 cup healthy oil/fat of your choice (olive oil or butter)
1 egg, beaten lightly
2 Tb honey
1/2 cup shredded cheddar cheese (optional)
Preheat the oven to 425 degrees
1. Saute the onion, garlic and jalapeno over medium heat, stirring often until softened (about 5 minutes.) Remove from the heat. Meanwhile
2. Combine the dry ingredients in a large bowl, whisk to combine
3. Whisk together the wet ingredients
4. Pour the wet ingredients, sauteed onion mixture and cheese into the dry ingredients. Stir gently (don’t whisk) using a rubber spatula or wooden spoon until just combined
5. Place 1/4 – 1/3 cup batter into prepared muffin tins (sprayed/oiled/lined with muffin tin liners)
6. Bake for 20-22 minutes until the top is golden brown
Gobble up and enjoy!
