Creamy Goddess-Ranch Dressing/Dip. Easy, Healthy, Gluten Free Homemade Salad Dressing
Do you love creamy, rich salad dressings? I know I do!
I used to eat a big salad for lunch every day with store bought light ranch dressing. It was my favorite lunch ever. Then I read the ingredients list and when I made my commitment to cutting out as many processed foods (and added sugar) as possible, this was my first bad habit to go.
I love my standby balsamic/olive oil with a tiny bit of honey but I really like to have a creamy dressing option also that fits in with my needs. I usually make a homemade ranch but last night I was craving something different. I love green goddess dressing but wanted something with that same creamy ranch kick. 
This is what I threw together! This is now my new favorite. Easy, full of healthy antioxidants (avocado, fresh herbs and garlic) and it tastes delicious! You can use it as a dip for vegetables or as a dressing for salad. 
I tossed it with some baby kale and leftover cooked quinoa today for my lunch. Talk about a healthy, satisfying lunch!
Creamy Goddess-Ranch Dressing
Makes approximately 1 1/2 cups
Put everything in a blender or food processor (I use my mini drink blender):
1 cup Greek yogurt (plain, low fat, organic if possible)
1 avocado, cut into cubes
1 clove garlic
1 lemon, juiced
1 pinch Kosher/sea salt
Fresh ground black pepper to taste
1 cup fresh herbs – I used cilantro, dill and Italian parsley. Substitute 1 tsp dried dill or parsley if you don’t have fresh on hand.
Blend away! The longer you blend the thinner it gets. Add a splash of water if you want it very thin.
