Now THIS would make an excellent choice the next time you have friends over to enjoy the beautiful summer we are having! Seasonally available produce, grown locally, simply prepared, elegant and delicious.
Gourmet, beautiful to look at, but also easy! What could be better than that?
I made this as kebabs also to show you how great THAT would look piled up on a platter! Last night we had it family style, simply served, still beautiful. The taste is amazing – fresh, light and satisfying. Healthy too! Oh yes, did I mention this took all of 15 minutes to make?
Grilled Fish and Vegetables Provencal
1 lb cod, halibut or other firm white fish of your choice
1 small or 1/2 large eggplant, cut into 2″ dice
2 zucchini, cut into 2″ dice
1 onion, quartered (leave skin on and root intact so it doesn’t fall through the grill) separate if making kebabs
2 tomatoes, quartered
1/4 cup olive oil
4 cloves garlic, minced
2 tsp Herbs de Provence (or make your own with a pinch of dried basil, oregano, rosemary, thyme and lavender if you have it)
1/4 cup fresh chopped basil
1 lemon, juiced
3 pinches Kosher/sea salt
Fresh ground black pepper, to taste
Additional olive oil and sea salt, for finishing
Preheat grill to medium high. Place fish and vegetables aside to take to the grill. Combine the olive oil, garlic, herbs, seasonings and lemon juice. Baste the vegetables and fish with this mixture, reserving the rest. Grill the fish and vegetables until golden brown and crisp-tender (everything will finish in about the same time!) about 10 minutes, basting with the oil mixture until it is used up. Arrange on a platter and drizzle with a bit of high quality olive oil and a final kiss of sea salt if you wish.
Serve, enjoy, celebrate and indulge in this glorious meal you prepared.
