Healthified Chocolate Chip Cookies – Healthy cookies, gluten free, unprocessed, easy and AMAZING! Surprise ingredient :)
Finding a good healthy chocolate chip recipe..who knew this would require so much work! I’ve made chocolate chip cookies by substituting whole grain flour, using real butter, etc. That is easy, yes they are healthier but not by a whole lot. For those of us that can’t tolerate gluten finding a good recipe that isn’t highly processed is tricky too! I’ve also been trying to incorporate more quinoa into my diet so wanted to utilize that in some way.
After many, many failed attempts I finally came up with a recipe that I love. They are delicious, healthy and pretty easy too! If you’re going to serve snacks and treats to your kids, try making these homemade little goodies and feel good about what you give to your kids!
These are fluffy, soft, moist, delicious. A bit nutty from the quinoa (don’t worry, they don’t taste like quinoa at all if you’re not a fan), wholesome, just sweet enough.

Makes 18 cookies
Preheat oven to 350 degrees
1 cup cooked quinoa (you can have this in the refrigerator on hand or make it for this. I make mine by placing 1/2 cup quinoa and 1 cup water in a microwaveable glass bowl. Microwave for 10 minutes at 80% power.)
1/2 cup gluten free oats (regular rolled oats)
1/2 cup gluten free flour (I use Bob’s Red Mill) – if you enjoy whole grain flour go ahead and substitute it for this – you will just need to mix the flour in at the end, folded in after the other ingredients are blended
1 tsp baking powder
½ tsp kosher/sea salt
2 Tb coconut oil
2 Tb organic butter, softened
2 Tb organic brown sugar
2 Tb honey
Blend the above ingredients in a blender or food processor until smooth (you may have to pulse a few times to get the coconut oil to break down completely – you can microwave it a few seconds to soften if necessary)
Stir in 1 cup dark chocolate chips, chopped nuts if you wish
Place a heaping teaspoon for each cookie on a sprayed cookie sheet, about 2” apart. Bake for 10 minutes. Enjoy!
