Healthy Green Bean Fried Rice

This is a great meal, any time of day! We ate it for breakfast with the leftovers from my Teriyaki Ribs recipe. I wanted a high protein meal post workout this past weekend. I had the brown/wild rice and the meat from a couple of ribs leftover as well as some steamed green beans. I thought “fried rice”! I make extra brown rice purposely to make fried rice with eggs and onions, this is just another variation!

Healthy Green Bean Fried Rice

Serves 4

2 tsp healthy oil/fat of your choice

4 eggs, whisked

1/2 onion, minced

1 cup green beans, chopped into 1/2″ pieces leftover or steamed in the microwave for a few minutes

1 cup leftover chicken, pork, etc. if you have it, chopped into 1/2″ pieces

1 cup brown rice, cooked and cooled

1 cup organic frozen peas and carrots, thawed in the microwave for a few minutes

2 Tb Tamari soy sauce

1/2 tsp crushed red pepper flakes

Heat a large sauce pan over high heat. Add the oil, swirl around the pan. Add the eggs and scramble. When they are almost cooked add the onion, green beans, chicken, rice, peas, carrots, soy sauce and pepper flakes. Stir fry, stirring constantly, tossing the ingredients together. When the rice starts browning it is done! Remove from the heat and serve. Enjoy! We like it topped with a bit of sriracha sauce, yum!
