Honey mango shrimp over brown rice. Fast, healthy, sweet and savory stir fry.
This is a dish I make for many of my personal chef clients and they request it often. I make a different version with chicken and cashews sometimes also but shrimp – you can’t go wrong!
Shrimp, mango, chopped almonds coated in a 2 ingredient sauce. Quick, easy and healthy!
The ingredients can be prepped while you wait for your pan to heat up! Stir fry up in minutes and serve over steamed brown rice. Dinner – done!
Honey mango shrimp over brown rice
Serves 4
2 tsp healthy oil/fat of your choice
1 lb shrimp, peeled and deveined
1 onion, chopped
1 mango, peeled and chopped
3 cloves garlic, minced
2 Tb Tamari (gluten free) soy sauce
2 Tb honey
2 cups cooked brown rice
Heat a large skillet or wok over high heat. While the pan is heating chop your onion, mango and garlic. When the pan is hot add the oil, swirl to coat. Toss in the shrimp, onions, mango and garlic. Cook 2 minutes, stirring often. Add the Tamari and honey. Stir and cook until the shrimp are cooked and the sauce thickens, about 4-5 more minutes. Serve over brown rice. Enjoy! *Feel free to substitute chicken to switch it up!
