Hot N’ Healthy Snack #2: Big Beautiful Bowl Of Crunchy Goodness For Your Next Snack Attack!
My 5- day menu plan peeps will be familiar with my Hot n’ Healthy Nuts – a delicious, crunchy, warm and healthy snack to have once or twice per day. This is a variation of that snack. Perfect for watching a movie! Crunch away on your big bowl of warm goodies and you will have consumed about 15 grams of fiber- in one serving!
Swap this snack for your standby bagged popcorn or other unhealthy treats you may find yourself going for during movie night and you will be healthifying your bod – without even trying – and enjoying every bite!
I try not to eat plain popcorn – why? Popcorn is medium-high on the glycemic index. This is why I add the nuts to help balance the glycemic load of the snack. Easy – makes it healthier too! This way eating a small portion of popcorn (although you will get a big bowl to enjoy in my opinion) more filling and satisfying, as well as more nutritious.
I’m giving away my secret for perfectly popped popcorn at home – you’ll never to back to bagged! This takes almost the same amount of time AND this costs just pennies – crunch away!
Hot N’ Healthy Corn n’ Nuts
Serves 1 (double, triple, quadruple to your hearts content! Just use a bigger pot of course!)
1/2 tsp olive oil
1/4 cup popcorn kernels (I get mine in the bulk food section)
2 Tb raw almonds (bulk food section)
2 Tb pepitas – raw pumpkin seeds (yep – bulk food section)
Pinch salt (optional)
Other seasonings (dried herbs, sprinkle of parmesan cheese, chili powder, etc.)
Put a saucepan (with a tight fitting lid) on the stove, add the oil and 3 popcorn kernels. Cover and turn the heat to medium high. As soon as the three kernels pop add the rest of the kernels, put the lid back on and swirl the pan. As soon as the kernels stop popping remove from the heat and add the nuts/seeds. Cover again and swirl the pan. Leave on the heat for about 30 seconds (you’ll start to hear the pepitas popping). Remove the lid and season as you wish. I also drizzle ours with a tiny 1/2 tsp full of butter olive oil from Quintessential Gourmet in Seattle. This is an all naturally flavored healthy olive oil that tastes JUST like butter!
