LOVE this – Organicgirl Baby Kale Salad
Most of us know it is important to eat our greens. They have important vitamins, fiber, etc. etc. I love kale, sauteed or swirled into soups (such as my Tuscan Winter Soup or hidden in my Healthified Enchiladas.) Eating kale raw is fabulous for your health but choking down on raw kale is tough for even those of us who have pretty much NO food they are picky about. I’ll do it, but I don’t love it.
I found this at the market recently and I can’t get enough of it! Organicgirl has quite a few products I love, not only because they are always super fresh and tender, but they come in a great little clam shell container that keeps them fresh. In a perfect world I grow my own greens (because they are REALLY easy to grow), wash and dry them and use them immediately, but this isn’t a perfect world.
I like to use products that are convenient without compromising quality, or the planet. Having this in my refrigerator makes it easy to whip up a quick salad for lunch or dinner – I add some avocado, chopped veggies, hard cooked eggs, etc. for an almost instant meal I feel good about. Tip: Keep the greens even fresher longer by adding a paper towel to the bottom of the container when you get it home.
