The next time you fire up the grill, make: Roasted Tomatillo Salsa. Quick. Easy.
This is one of my very favorite sauces to keep around. I use it in a raw version often as a sauce for chicken enchiladas or to add flavor to my Healthified chili. But, when I have the grill going I throw on a few ingredients while everything else is cooking, toss it all in the blender and boom. Done. This is delicious on it’s own, to put over carne asada tacos or just over some grilled chicken.
Amazing, simple, healthy Roasted Tomatillo Salsa. Get addicted to this stuff!
Makes about 1 cup – easily doubles for a party or to keep around.
1 onion, quartered
4 cloves garlic, skin on
6 tomatillos, washed
1-2 jalapenos, washed
Throw these ingredients on the grill until blackened. Then put them into the blender with
1 pinch Kosher/sea salt
1/2 cup fresh cilantro torn right from the bunch
Juice from 1 juicy or 2 regular limes
Start blending. You may have to pulse a few times to get it going but then let it run a minute or so. Serve and enjoy!
Freeze if you won’t be using it within a few days.
