Slow Cooked Beef Provencal…Turns Into French Country Beef and Lentil Soup!

Every week you get a delicious slow cooker meal that is planned for another healthy, quick prep meal later in the week! This is the plan for all of the meals. I want you in and out of the kitchen quick, spending little money and STILL eating delicious, healthy, gourmet meals meals that will bring life to your table!

Braised beef Provencal over pasta

Serves 4 -6

2-3 lb beef top round roast

1 onion, chopped

1 small eggplant, diced

1 fennel bulb, sliced

15 oz canned diced tomatoes with juices

4 cloves garlic, minced

1 cup black olives, imported, optional

2 Tbs fresh rosemary, minced

4 pinches Kosher/sea saltfresh ground pepper to taste

1 cup wine (red or white)1/2 cup fresh basil, chopped

1 cup pasta (quinoa, corn, gluten free or whole grain) cooked as directed

Put all of the ingredients (except the basil and pasta) into the slow cooker. Stir to combine and cook on low heat for 6-10 hours. Cook the pasta just before serving. Set aside 2 cups of the beef, shred, cool and refrigerate for Day 2. Remove the roast and slice (it will be so tender it may just fall apart!) Stir the fresh basil into the sauce. Serve the pasta topped with the beef and sauce. Enjoy!Day 1 Menu Note: You will be saving 2 cups of the cooked beef for Day 2.

Menus by Mesa de Vida! French country beef & lentil soup

Serves 4 -6

2 cups leftover shredded beef from Day 1

1 onion, chopped

4 carrots, sliced into 1/4-inch rounds

1 sprig Rosemary (or use 1 tsp dried)

2 cloves garlic, minced

15 oz canned diced tomatoes with juices

1 cup lentils, rinsed

6 cups homemade or high quality organic chicken or vegetable broth

3 pinches Kosher/sea salt

fresh ground pepper to taste

1 lemon, juiced

Add all of the ingredients to the slow cooker, stir to combine. Cook on low for 6-10 hours. Enjoy!
