Stir fried Shiritaki noodles and vegetables. Have you tried these noodles yet?
I just wanted to pass on a quick little recipe I made for lunch today that required no chopping and cooked in about 10 minutes. Stir fried noodles sounded good and I had some of those cool Shiritaki noodles in the refrigerator and a package of chopped stir fry vegetables (not something I always keep around but I grab from time to time for quick meals). Shiritaki noodles are about 20 calories per serving and are made from tofu and a bit of yam powder. Gluten free and delicious!
This is barely a recipe it is so simple – just another option for a quick lunch or light dinner if you were thinking about trying these noodles!
I added some cooked shrimp to the top of mine, you can add chicken if you wish or eat them as is.
Stir Fried Shirtaki Noodles with Vegetables
Makes 2-3 servings
2 tsp health oil/fat of your choice
2 pkg Shiritaki noodles, rinsed, drained and microwaved for 1 minute
3 cups assorted stir fry vegetables – find in the prepared vegetable section by the salad packages at your store
1 clove garlic, crushed
2 Tb Tamari soy sauce
1 tsp honey
Heat a large skillet over high heat. When hot add your oil, swirl to coat. Add the remaining ingredients and stir fry until they release their liquid then it starts evaporating off, getting a bit browned. Serve and enjoy!
