Using Mesa de Vida healthy cooking sauces to create a myriad of meals:

1 jar of your favorite Mesa de Vida cooking sauce
+
1 -2 pounds of meat (beef/chicken/turkey/pork/fish) OR 2 pounds of tofu OR 2 cans (or about 1 1/2 cups uncooked) beans OR 2 cups of your grain of choice (quinoa/rice/millet/etc.)
+
Optional: Healthy oil/fat of your choice, salt and hot sauce to taste

Saute: Uses: Tacos, taquitos, enchiladas, burritos, quesadillas, chili starter, rice/bean bowls.

  1. Heat a large skillet over medium high heat.
  2. Optional: When hot add oil, swirl to coat.
  3. Add a jar of your favorite Mesa de Vida cooking sauce, plus ground or chopped meat or tofu of your choice to the pan.
  4. After pouring the sauce into the pan add about 1 Tb of water or broth to the jar, place the lid on and give it a shake to get all of the goodness out of the jar!
  5. Optional: Season to taste with salt or hot sauce.
  6. Stirring often to crumble the meat or tofu, cook until thickened and the meat (if using) is fully cooked.
  7. Making chili? Simply add a can of beans, a can of crushed tomatoes and 1 cup of broth. Simmer for about 20 more minutes, covered.

Simmer: Uses: Tasty grains or beans, jambalaya, paella style rice, Spanish rice, Creole rice and beans, refried beans.

  1. Heat a saucepan over medium high heat
  2. Optional: When hot add oil, swirl to coat. If adding meat or tofu for a one-pan complete meal, brown and leave in the pan as you proceed.
  3. If using grain: Add 2 cups of grain (quinoa/rice/millet/etc.) to the saucepan, if using oil, stir to coat. Pour your favorite Mesa de Vida cooking sauce into a 4 cup measuring cup. Add water or broth so you have a total of 4 cups liquid. Pour into the saucepan with the grain. Optional: Season to taste with salt or hot sauce. Bring to a boil, lower the heat to low and cover. Simmer for 20 minutes (45 minutes for brown rice). Turn off heat. Fluff with a fork, cover and let rest for 5 minutes.
  4. If using beans: Add 2 cans of rinsed and drained cooked beans OR 1 ½ cups of uncooked beans, presoaked. Pour your favorite Mesa de Vida cooking sauce into a 4 cup measuring cup. Add water or broth so you have a total of 4 cups liquid. Pour into the saucepan with the beans. Optional: Season to taste with salt or hot sauce. Bring to a boil, lower the heat to low and cover. Simmer for 20 minutes (1 hour to 1 ½ hours for uncooked beans). Turn off heat. Fluff with a fork, cover and let rest for 5 minutes. Mash if desired.

Braise: Uses: Tacos al-pastor, carnitas, barbacoa, saucy chicken for enchiladas or burritos, roast or ribs, pulled pork/chicken/beef/turkey.

  1. For tender, delectable meat: Heat a large skillet or dutch oven over medium high heat.
  2. Add 2 tsp healthy oil/fat of your choice, swirl to coat.
  3. Optional: Season meat (chicken pieces on-or-off the bone, pork or beef roasts or tenderloin, turkey breast, etc.) to taste with salt or hot sauce.
  4. Sear the meat to golden brown on all sides.
  5. Pour your favorite Mesa de Vida cooking sauce over the meat. After pouring the sauce into the pan add enough water or broth to the jar to cover the meat about half way, place the lid on and give it a shake to get all of the goodness out of the jar! Add any additional vegetables you’d like at this point.
  6. Bring to a boil, lower the heat to low and cover. Simmer until meat is tender and fully cooked. Turn off the heat and let rest for 5-10 minutes.
  7. Slice or shred to use as you wish!

Slow Cook:

For meat and meat stews, chilis, etc.:

  1. Optional step if you’d like to brown your meat first: Heat a large skillet or dutch oven over medium high heat. Add 2 tsp healthy oil/fat of your choice, swirl to coat. Sear the meat to golden brown on all sides.
  2. Optional: Season meat (chicken pieces on-or-off the bone, pork or beef roasts or tenderloin, turkey breast, etc.) to taste with salt or hot sauce.
  3. Pour your favorite Mesa de Vida cooking sauce over the meat. After pouring the sauce into the pan add enough water or broth to the jar to cover the meat about a quarter of the way, place the lid on and give it a shake to get all of the goodness out of the jar!
  4. Making chili, stew, or one-pot meal? Add beans, canned tomatoes, chopped vegetables, rice, potatoes, and additional water or broth if necessary.
  5. Cover and cook on low for several hours until the meat is fall-apart tender and fully cooked.
  6. Slice or shred to use as you wish!

For vegetarian/vegan stews, chilis, etc.:

  1. Pour your favorite Mesa de Vida cooking sauce over the meat. After pouring the sauce into the pan add a bit of water or broth to the jar, place the lid on and give it a shake to get all of the goodness out of the jar!

  3. Cover and cook on low for several hours until your recipe is tender and fully cooked.

One-Pan Oven Dishes: Use your imagination to create delectable and inspired meals with your favorite ingredients!

  1. Place your favorite meat or tofu into an oven safe dish. Add vegetables, beans or rice, additional vegetables, potatoes and/or squash.
  2. Optional: Season to taste with salt or hot sauce.
  3. Pour your favorite Mesa de Vida cooking sauce over the ingredients.. After pouring the sauce into the pan add a bit of water or broth to the jar, place the lid on and give it a shake to get all of the goodness out of the jar!
  4. Cover and oven bake until fully cooked.

Marinate: Uses: Grilled or sauteed meat, fish or tofu.

  1. Pour your favorite Mesa de Vida cooking sauce over the meat, fish or tofu. Optional: Season to taste with salt or hot sauce. Cover and refrigerate 15 minutes up to overnight.
  2. Remove the meat or tofu from the marinade. Proceed to grill or saute/simmer/braise/slow cook as described above.
