A tagine is a traditional cone-shaped pot used to cook many dishes traditional in North African as well as the Middle-East. The shape of the pot allows the flavors of the rich, intense ingredients to meld perfectly together and the resulting dish is tender, succulent and incredibly flavorful.

You can recreate the effects at home without a tagine by using your slow cooker or a heavy pot in the oven – they work perfectly! Using Mesa de Vida cooking sauces as the flavor base gives you all of the flavor without all of the chopping or having to have a spice cabinet full of special ingredients!

Both of these recipes are delicious with a cooling raita: Mix 1 cup plain yogurt, 1 cup shredded cucumber, 1 tsp fresh lemon juice and chopped fresh herbs like mint, parsley or dill to combine. Let rest while your tagine cooks and invite everyone to your inspired table of life!

North African Inspired Beef or Lamb Tagine

Serves 4-6. Serve with grain of your choice (quinoa, rice, millet, couscous-contains gluten) or flatbread (may contain gluten) if you wish.

1 lb diced boneless beef or lamb. Use an affordable, flavorful cut such as chuck or shoulder, or leg or shank
1 jar Mesa de Vida North African Harissa Inspired Cooking Sauce
1 cup low-sodium broth (chicken, beef or vegetable)
1 eggplant, cubed
1 zucchini, cubed
1 cup brined olives, pitted
Optional: 1 can chickpeas, rinsed and drained, or 1 sweet potato, diced
Optional: Season to taste with salt and hot sauce

  1. Place the ingredients into a slow cooker or heavy pot. Mix to combine.
  2. For the oven: Cook in a 325 degree preheated oven for 3-4 hours. For the slow cooker: Cook on low for 6-8 hours.
  3. Stir and enjoy!

 

North African Inspired Vegetable Tagine

Serves 4-6. Serve with grain of your choice (quinoa, rice, millet, couscous-contains gluten) or flatbread (may contain gluten) if you wish.

1 jar Mesa de Vida North African Harissa Inspired Cooking Sauce
1 cup low-sodium broth (chicken, beef or vegetable)
1 head of cauliflower, cut into florets
1 sweet potato, cut into 2” dice
1 zucchini, diced
1 eggplant, diced
1 can chickpeas, rinsed and drained
Optional: 1 cup brined olives, pitted
Optional: Season to taste with salt and hot sauce

  1. Place the ingredients into a slow cooker or heavy pot. Mix to combine.
  2. For the oven: Cook in a 325 degree preheated oven for 2-3 hours. For the slow cooker: Cook on low for 4-6 hours.
  3. Stir and enjoy!
