I have to give a disclaimer on this: No recipe for Posole will ever be more delicious than someone’s mother’s recipe. Let’s start there. There is just some sort of magic in a Mexican madre’s recipes, right? I can say that my husband (from Mexico) is a connoisseur of Posole and he gives this recipe second place to his mother’s recipe. That’s a win in my book!
An even bigger win is how simple this recipe is!
Feel free to substitute chicken for the pork. You can even make it vegetarian if you would like, perhaps add in some beans instead.
Tip: This soup tastes even better the next day. Double or triple the recipe to make plenty!
How To Make Posole with Mesa de Vida Healthy Cooking Sauce
Makes 4-6 servings
1 1/2 lb pork shoulder roast, on the bone, cut into slices (the meat will be falling apart tender later, just break it down a bit so it can cook faster)
1 jar Mesa de Vida Smoky Latin Inspired Cooking Sauce (everything you need for the incredible flavor is in this jar of goodness!)
4 cups homemade or high quality store-bought chicken or vegetable broth
28 oz. canned hominy, rinsed and drained (sizes for cans vary, use approximately 3 cups or so)
3 cloves (the spice)
1 tsp dried oregano
2 bay leaves
Salt and hot sauce to taste
For topping: fresh lime, chopped cabbage (I like to use shredded cabbage and carrots for coleslaw) and crushed baked tortilla chips
To make: In a stock pot or dutch oven, sear the pork on all sides in a little bit of oil, optional. Add the remaining ingredients (except the toppings) and bring to a simmer. Lower the heat, cover and cook for 45 minutes. Shred the pork, discard the bones and serve up a bowl of this goodness!
How to make Posole in the Instant Pot
I make this in the Instant Pot in just 10 minutes! Simply saute the pork on the high saute setting. Add the ingredients and cook on the soup function for 10 minutes. Let the pressure release naturally. Shred the pork and enjoy!
