Tortilla Soup with Chicken recipe

Makes about 4 hearty servings

4 cups homemade or high quality low-sodium store-bought chicken broth

1 jar Mesa de Vida Smoky Latin Inspired Cooking Sauce

1 lb boneless, skinless chicken (use thighs or breast, or bone-in pieces)

2-3 cups baked tortilla chips (Make your own by cutting corn tortillas into thin strips, toss with a bit of olive oil. Bake at 400 degrees until golden brown and crispy.)

Fresh lime to taste

Salt and hot sauce to taste

Optional: Avocado

Combine the broth, Mesa de Vida Smoky Latin Inspired Cooking Sauce and chicken in a dutch oven or stock pot. Bring to a simmer, cover and lower the heat to medium low. Simmer until the chicken is tender (for boneless, skinless chicken thighs this will take about 30-40 minutes, boneless, skinless chicken breasts will cook a bit faster, chicken on the bone will take a bit longer). (Using an Instant Pot? Cook on the soup function, cutting your time down by about 10 minutes vs. using stove top method.) Remove the chicken from the broth, shred with a fork, add back to the broth. Season to taste with salt and hot sauce. Serve with crushed tortilla chips, fresh lime and avocado. Enjoy!

Vegan Tortilla Soup Recipe

Makes about 4 hearty servings

4 cups homemade or high quality low-sodium store-bought vegetable broth

1 jar Mesa de Vida Smoky Latin Inspired Cooking Sauce

1 can beans of your choice, rinsed and drained (pinto, chickpeas, kidney beans and black beans are all great)

Optional: 1-2 cups frozen or fresh corn

2-3 cups baked tortilla chips (Make your own by cutting corn tortillas into thin strips, toss with a bit of olive oil. Bake at 400 degrees until golden brown and crispy.)

Fresh lime to taste

Salt and hot sauce to taste

Optional: Avocado

Combine the broth, Mesa de Vida Smoky Latin Inspired Cooking Sauce and beans (corn as well if you’re including it) in a dutch oven or stock pot. Bring to a simmer, cover and lower the heat to medium low. Simmer for 30-40 minutes, Season to taste with salt and hot sauce. Serve with crushed tortilla chips, fresh lime and avocado. Enjoy!
