This simple recipe for Beef (or Bison) Stuffed Sweet Potatoes is not only incredibly tasty, it is also incredibly simple and fast! (This recipe is also gluten free, and Paleo friendly too.)

All you do is pour the sauce over your meat, saute until saucy and fully cooked, then spoon into soft baked sweet potatoes.

Beef (or Bison) Stuffed Sweet Potatoes
12-16 oz ground beef, bison or turkey
1 1/2-2 cups Mesa de Vida Smoky Latin inspired healthy cooking sauce
Salt and hot sauce to taste
4-6 small sweet potatoes, baked until tender, cut down the middle
Heat a large skillet over medium high heat, when hot add the meat, sauce, salt and hot sauce to taste. Simmer until thoroughly cooked and the sauce thickens up just a bit. Spoon into the center of the baked sweet potatoes and enjoy!
