Black Bean Huevos Rancheros
Ingredients
- 2 cans cooked black beans (about 6 cups) rinsed and drained well
- 1 jar Mesa de Vida Smoky Latin Cooking & Seasoning Sauce
- 2 Tb water
- Salt and hot sauce to taste
- 4-6 eggs
Serve with:
- crumbled cotija cheese, chopped cilantro, diced avocado, pickled onion; serve with warm tortillas if you wish
Instructions
- In a skillet, bring the black beans, Mesa de Vida Smoky Latin Cooking & Seasoning Sauce, water, and salt and hot sauce (if using) to a simmer. Lower the heat to medium-low, cover and simmer for 8 minutes.
- Using a spoon, create a well in the black beans for each egg. Crack in the eggs, season with salt and pepper.
- Cover and cook until the eggs are done to your liking.
- Serve with the toppings of your choice and enjoy!
