Make up a big batch of these crispy and flavorful roasted potatoes for dinner then enjoy the leftovers with eggs for breakfast, wrapped up in a vegetarian burrito along with some black beans, and a little salsa and cheese for lunch, tossed onto a Caesar salad instead of croutons, the uses are endless! They are a great side dish with our healthy, juicy meatloaf recipe!

Crispy Tender and Flavorful Latin Roasted Potatoes
1 lb Potatoes, cut into 1″ dice – We prefer red or Yukon Gold potatoes, but any potato will be delicious
2 Tb Mesa de Vida Smoky Latin Inspired Healthy Cooking Sauce
2 Tb olive oil, ghee or coconut oil (or any healthy oil/fat of your choice)
Salt and hot sauce to taste
1. Preheat your oven to 400 degrees.
2. Toss the ingredients together until evenly coated.
3. Place on a parchment lined baking sheet, evenly distributed on the pan.
4. Bake for 25-30 minutes until golden brown on the outside, tossing half way through if you wish.
5. Serve and enjoy!
