Easy, Healthified Torta

Made with Mesa de Vida Smoky Latin Cooking and Seasoning Sauce
Servings 4 -6 sandwiches

Ingredients
  

  • 1 lb ground meat, or meat alternative, of your choice
  • 1 can cooked black beans, rinsed and drained About 1-1/2 cups cooked black beans
  • 1 jar Mesa de Vida Smoky Latin Recipe Starter & Seasoning Sauce
  • 4 Tb water or broth
  • salt, hot sauce, or minced jalapenos to taste

For assembling the sandwiches

  • 4 buns/rolls of your choice baguettes, bolillo rolls, regular/whole wheat/gluten free hamburger buns all work great
  • optional: crumbled or shredded cheese We love shredded cheddar, co-jack, pepper jack, queso fresco, or cotija for this recipe
  • shredded cabbage or lettuce
  • optional: lime-crema made by whisking 1 Tb fresh lime juice with 1/4 cup sour cream, or crema

Instructions
 

  • Preheat a large skillet and a saucepan over medium heat.
  • Add your ground meat/meat alternative to the skillet, and the beans to the saucepan.
  • Scoop 2 Tb of the Mesa de Vida Smoky Latin Recipe Starter & Seasoning Sauce over the beans, add the remaining jar of sauce over the meat in the skillet.
  • Add 4 Tb water/broth to the empty jar, place the lid back on and give it a shake. Pour half over the bean mixture, 2 Tb to the meat mixture. Add salt, hot sauce/minced jalepenos at this point, if you like. (I add about 1 pinch of salt to each.)
  • Stir the beans, lower the heat to low and cover. Cook for 10 minutes
  • Stir the meat/meat alternative mixture, crumbling the meat as you stir. Once the meat is fully cooked, lower the heat to low and simmer for 10 minutes.
  • Meanwhile, toast your buns and keep warm until you're ready to assemble.
  • Take the beans and meat/meat alternative mixture off the heat. Remove the cover from the beans, then mash the beans with the back of a fork until spreadable.
  • Assemble the tortas by spreading a layer of the mashed beans to the bottom of the roll/bun, topping with meat, adding the shredded cabbage/lettuce, cheese, and a drizzle of the lime-crema (if using).
  • Enjoy!
