Butternut Squash Soup Recipe with Mesa de Vida North African Cooking Sauce

Course: Soup

Ingredients

  • 1 tsp healthy oil/fat of your choice, optional
  • 1/4 cup Mesa de Vida North African Cooking & Seasoning Sauce use 1/2 cup if you'd like more intense flavor
  • 4 cups cubed butternut squash fresh or frozen
  • 4 cups broth
  • salt to taste
  • 1 tsp fresh lemon juice
  • 1 1/2 tb maple syrup, optional

Instructions

  • Heat a large soup pot/Dutch oven over high heat. When hot add oil (optional) and Mesa de Vida North African cooking sauce. Stir and cook for 20 seconds.
  • Add butternut squash, broth, and salt to taste. Bring to a boil, then lower the heat to low and cover. Cook until the butternut squash is very tender.
  • Puree until smooth.
  • Add maple syrup, if using, and fresh lemon juice. Stir, then check for seasoning. Adjust salt if necessary.
  • Serve and enjoy!
