This is an incredibly simple and flavorful recipe for a healthy Black Bean Soup (including Instant Pot and slow cooker instructions) that takes literally minutes to make from scratch! We’ve included variations for a completely vegan recipe too (wait until you try the mushroom “bacon”. Yum.)

Yes, even if you’re using Mesa de Vida cooking sauces, you’re cooking from scratch. Smoky Southwestern Black Bean Soup Recipe(with vegan, and Instant Pot, and slow cooker variations)

Makes 4-6 hearty servings. 

Recipe tip: Want to turn this into incredibly flavorful refried beans? Use 1/2 the amount of Mesa de Vida Smoky Latin Inspired Cooking Sauce and only 1 cup of broth. Mash after cooking and simmer until thick and rich. 

1 jar Mesa de Vida Smoky Latin Inspired Cooking Sauce

3 cups broth, homemade or high quality low-sodium store-bought. (Use vegetable broth to keep it vegan.)

6 cups cooked black beans (rinsed and drained if using canned)

Salt and hot sauce to taste

Optional toppings: Fresh lime, avocado, crispy diced bacon. (For vegan “bacon”, toss thinly sliced shiitake mushrooms in just a bit of olive oil to coat, season to taste with salt and pepper. Lay on a parchment lined baking sheet and bake at 400 degrees until crispy and browned, turning occasionally. ) 

    1. Combine the Mesa de Vida Smoky Latin Inspired Cooking Sauce, broth, black beans and salt/hot sauce in a large stock pot or dutch oven. Bring to a simmer, cover and lower the heat to medium-low (keep at a low simmer). Cook for 30-40 minutes. (Instant Pot directions: Cook on Soup setting at normal pressure for 5 minutes, then let the pressure release naturally. Slow cooker directions: Place ingredients into the slow cooker, cook in low for 6-8 hours, or high for 3-4 hours.)
    2. Use an immersion blender to puree until thick, creamy and smooth. Or, carefully blend in a blender in small batches.
    3. Do you like your soup a little thicker? Simmer over medium heat a bit longer until as thick as you like. Do you like it thinner? Simply add a bit more broth.
    4. Garnish with a squeeze of fresh lime juice, avocado and bacon (regular or vegan) and enjoy!
