If you’re looking for a quick and delicious breakfast packed with protein you’ve come to the right place.
Migas, or scrambled eggs with golden brown tortilla strips, is just the answer when you’re seeking a comforting meal to make you feel better after a night of celebrating! It actually makes a fantastic meal any time of day, and is a go-to in our house.
It’s healthy too, with fresh spinach, protein, and a bit of our Smoky Latin inspired healthy cooking sauce/flavor base, which adds loads of flavor – simply! Keep it gluten free by using corn tortillas, or if you’re following a Paleo, Whole 30 or low-carb lifestyle skip the tortillas all together. For those of you following the Whole 30 lifestyle you can start with some crispy diced potatoes instead, which would be delicious!
Here is how I make it:
Migas or Latin Scrambled Eggs
1-2 tsp healthy oil/fat of your choice, divided
3-4 tortillas, cut into thin strips
1 big handful of spinach, chopped if you wish
2 tb Mesa de Vida Smoky Latin inspired healthy cooking sauce/flavor base
Salt to taste, optional
3-4 eggs, beaten
Toppings of your choice – Sliced radish, fresh chopped onion, avocado, shredded cheese, jalapeno pepper, fresh cilantro, and a dash of hot sauce.
Heat a pan over medium heat, when hot add half of the oil, swirl to coat.
Add the tortilla strips and cook until golden brown. Remove the crunchy tortilla strips to a plate.
Add the remaining oil to the pan, swirl to coat. Add the spinach, Mesa de Vida Smoky Latin inspired healthy cooking sauce/flavor base, and salt to taste. Stir, cook just until the spinach wilts, about 20 seconds.
Pour in the eggs, stir until they just set, then stir in the crunchy tortilla strips. Cook until the eggs are still tender and just set.
Add the toppings of your choice, enjoy!
