This incredible slow cooker recipe is no ordinary stew!

No tagine on hand? The slow cooker is a great alternative to the North African cooking vessel, also the name for the meals cooked within.

Cooked low and slow, all the flavors have time to meld perfectly together, resulting in a complex, richly flavored stew (tagine) and tender, fall-apart meat.

Boneless leg of lamb, or lamb stew meat work great here, as do beef short ribs or chuck roast. *I used Cattail Creek lamb, available at PNW Whole Foods Markets, in this recipe.

This recipe is: Dairy free, gluten free, low sodium, Whole30 and Paleo-friendly, plant-based vegetarian-friendly substitutions included.

Lamb tagine recipe

North African Tagine Inspired Slow Cooker Stew

Servings 4 to 6

Equipment

  • Slow Cooker

Ingredients
  

  • 2 lb boneless leg of lamb or lamb shoulder cut into 1" cubes. Can substitute lamb stew meat, or 4lb beef short ribs, or 2 lb beef stew meat, or 2 lb boneless beef chuck roastcut into 1” cubes
  • 1 jar Mesa de Vida North African Recipe Starter and Cooking Sauce
  • 2 cups beef or lamb broth
  • 4 small, or 2 large Russett potatoes peeled (optional) and cut into approximately 2” cubes
  • 4 carrots peeled and cut into approximately 2” pieces *Other root vegetables you can use here:parsnips, turnips, rutabagas, sweet potatoes
  • salt to taste Mesade Vida sauces are extremely low in sodium, allowing you to salt to your owntastes/preferences. If sodium isn’t a concern, I recommend 1-1/2 tsp
  • *Optional additions: 1 cup quartered dried apricots, dates, or prunes; 1 cup green olives
  • *Optional for serving: harissa; fresh chopped parsley; hot cooked mashed cauliflower or cauliflower rice, hot cooked couscous, cooked lentils, cooked chickpeas, hot cooked rice, or warm flatbread

Instructions
 

  • *Optional step: sear the lamb/beef before adding to the slow cooker.
  • Place the meat, Mesa de Vida sauce, broth, potatoes, carrots, salt (and dried fruit and olives, if using) into the slow cooker, stir to combine.
  • Cover and cook on low for 6-8 hours.
  • Stir to combine, add harissa and/or fresh parsley if you wish, and serve with the side dish of your choice.
  • Enjoy! 

Notes

  • Plant-based vegetarian version: Swap the meat out for 1 large eggplant, peeled and cubed, and add 2 cups of additional root vegetables (parsnips, sweet potatoes, turnips, or rutabagas), and us vegetable broth.
