Servings 4 -6 people

Ingredients
  

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 jar Mesa de Vida Smoky Latin Cooking & Seasoning sauce
  • 1 small can diced green chilies, or diced jalapenos if you like it spicier
  • 15 oz canned crushed tomatoes/tomato puree
  • 1 cup water or high quality broth add bone broth for extra nourishment
  • Kosher/sea salt and additional hot sauce, to taste Our Smoky Latin cooking sauce is extremely low in sodium, and very mild, so you get to control the salt and heat level to your own health needs/tastes.

Instructions
 

To make on the stovetop (approximately 40 minutes cooking time)

  • Place all of the ingredients into a large stockpot/Dutch oven. *If you're adding cooked beans or frozen corn add them at this point.
  • Bring to a boil, reduce heat to low and cover.
  • Cook on low for 35-45 minutes until the chicken easily falls apart with a fork.
  • Remove the chicken to a bowl, shred with two forks, add back to the soup.
  • Serve with the toppings of your choice and enjoy!

To make in the slow cooker or Instant Pot:

  • Place all of the ingredients into the slow cooker or Instant Pot. *If you're adding cooked beans or frozen corn add them at this point.
  • For the slow cooker: Cook on high for 3 hours, or low for 6 hours. For the Instant Pot: Cook at pressure for 10 minutes, then let the pressure release naturally.
  • Remove the chicken to a bowl, shred with two forks, add back to the soup.
  • Serve with the toppings of your choice and enjoy!
