Mediterranean roast chicken and braised potatoes recipe

  • 1 whole chicken
  • 1 jar Mesa de Vida Mediterranean cooking and seasoning sauce
  • 4-6 cups quartered Yukon Gold or red potatoes
  • 1/2 cup water or broth
  • Salt to taste Mesa de Vida gourmet cooking and seasoning sauces are low in sodium so you control the salt to your own tastes and needs


  • Preheat your oven to 375 degrees. Choose a heavy bottom pot with high sides, such as a Dutch oven.
  • Add the chicken, Mesa de Vida Mediterranean cooking and seasoning sauce, potatoes, and salt to taste to the pot. Toss everything to coat with the sauce. Arrange the chicken in the center of the pot, back side up, and arrange the potatoes around the chicken.
  • Pour the water or broth over the potatoes. Cover the pot and place into the oven.
  • Bake for 30 minutes with the cover on, then remove the cover of the pot. Continue baking the chicken, back side up, for 15 minutes.
  • Using tongs, carefully flip the chicken over, breast side up into the pan. Bake for 15-30 minutes more. The time will depend on the size of your chicken, and oven.
  • Bake until the chicken reaches 170 degrees. Remove from the oven and rest for 10 minutes.
  • Remove the chicken from the pot, and gently toss the potatoes with all of the delicious pan juices. Pour a bit of the juices over the top of the chicken, serve and enjoy!
