Optional step: Brown beef on all sides until golden brown.
Place all ingredients into the slow cooker, stir to combine. Cook on low 4-6 hours. If you want to cook this for longer, simply use larger pieces of meat, or turn to "keep warm" after 6 hours.
Optional step: If you prefer your stew with a very thick gravy, mash together 1 Tb butter and 1 Tb flour and whisk into the stew with 1 additional cup of broth. Cook on low for 15 more minutes.
