Moroccan Chicken and Rice recipe

This is an easy and delicious chicken and rice recipe with a global gourmet twist. We used RightRice, which is a par-cooked, veggie and nutrition-packed rice blend, so this recipe from start to finish takes about 15 minutes, making it a perfect go-to weeknight recipe. Pair it with a side salad, or some simple sliced tomatoes and cucumber, or add extra vegetables such as chopped broccoli or diced green beans when you're cooking your protein, and you've got a complete meal!

*We've included the recipe alterations if you're using uncooked white or brown rice.

  • 2 tsp healthy oil/fat of your choice
  • 1 lb boneless, skinless thighs or breasts diced into 1-1/2" pieces
  • 2 Tb Mesa de Vida North African cooking and seasoning sauce
  • 1 package RightRice original flavor
  • 1-1/3 cup broth or water
  • 1 pinch salt to taste


  • Preheat a large saucepan over medium-high heat. When hot add oil, swirl to coat.
  • Add the chicken pieces, cook on all sides until golden brown and fully cooked.
  • Add the Mesa de Vida North African cooking and seasoning sauce, RightRice, broth/water, and salt to taste. Stir to combine.
  • Bring to a boil, cover and turn off the heat. Let the pan sit for 10 minutes.
  • *Optional step, but one I love: As soon as the 10 minutes are up, turn the heat back on to high for 1 minute to let the bottom of the rice get just a bit crispy and browned.
  • Fluff with a fork and serve. Enjoy!

To make with regular white or brown rice instead of RightRice:

  • Use 1 cup of regular rice and 2 cups of broth/water. After browning the meat, add the rice, broth/water, Mesa de Vida cooking sauce, and salt to the pan. Bring to a boil, then cover and simmer over low heat for 20 minutes (45 minutes for brown rice) until the liquid is fully absorbed and the rice is fluffy.
