Heat a skillet over medium heat. Add oil to thinly coat the bottom of the pan, optional
Season the chicken with salt to taste (optional). Add to the skillet and cook on both sides until golden brown.
Add the remaining ingredients. Bring to a simmer, lower the heat to low and cover.
Cook until the chicken is cooked through and tender, about 20 minutes. Taste, add additional salt if necessary. Serve your delicious saucy chicken with rice or cauliflower rice.
